Xiamen is one of those cities where the food feels very tied to the place itself.
Because it’s coastal, a lot of the local dishes are shaped by seafood, but the overall flavor profile is not as heavy as people sometimes expect. It’s comforting, a little sweet-savory, and very easy to ease into. These are a few things I’d recommend trying first.
